Secret's in the sauce

STRATHAM — Since the start of Stratham Fair, the Crow family has been attracting locals to its chicken barbecue and the famous sauce which remains top secret.

When Stratham Fair first got started 44 years ago, Dwight Crow volunteered to grill the chicken for the public, as long as someone volunteered to make the sauce. A "little old lady down the street" agreed to make the sauce, and that same secret recipe has been a part of the Crow family barbecue at the Stratham Fair ever since. "She's still in town, she's still down the street, and she's still making the sauce," said Dwight's son Dan Crow, who is now in charge of the chicken barbecue at the fair.

Every year when the fair approaches, Crow goes down the street and visits Elizabeth Noyes, who has been making the secret sauce for more than four decades, using the same delicious recipe.

The crisp, clean and tangy flavor of the sauce invites many guesses as to the ingredients, said Crow, but the recipe remains top secret.

Although Crow has his suspicions about what's in the sauce, the ingredients have never been revealed to him, he said. The recipe, however, has been passed down to Noyes' son and grandson, he said.

Just like the special barbecue sauce, the Crow family is found at the Stratham Fair every year, preparing meals surrounded by familiar faces. This Sunday, July 24 at 11 a.m., about 10 friends and family members of the Crows will be grilling at the dining tent of the fairgrounds, lead by Crow and his son Josh, an emergency medical technician and firefighter. Crow said his father Dwight still oversees the process.

Each year, the chicken is cooked over charcoal briquettes, which makes the meat well cooked and the outside crispy.

"It's a real hot fire and it's really good crispy skin," said Crow, who is also president of the Stratham Volunteer Fire Association.

This year, the Crow family is preparing 400 meals, which will include a half-chicken, corn on the cob, watermelon, rolls, and drinks. All proceeds will go to benefit the Stratham Volunteer Fire Department.

The Stratham Fair will begin this Thursday and last until Sunday night. The Crows' chicken barbecue will take place on Sunday at 11 a.m., at the dining tent.

Chipotle Barbecue Sauce

Homemade barbecue sauce in 10 minutes!

Ingredients 2 Tbsp olive oil 1/4 cup chopped onion 1 clove garlic, minced 1/3 cup peppers and sauce from canned chipotles in adobo, minced 2/3 cup ketchup 1/4-1/2 cup water 1 Tbsp cider vinegar 1 Tbsp spicy brown (or creole) mustard 1 Tbsp molasses (or brown sugar, optional) Black pepper Pinch of salt Instructions Heat oil over medium heat in a medium sauce pan. Saute onions until soft and translucent. Add garlic, stir, and cook for 1 minute more. Add the minced chipotles and sauce to the pan. Stir in the ketchup, vinegar, mustard, and molasses. Thin with water to desired consistency (I usually use about 1/2 cup) and heat just until bubbles begin to appear. Taste and season with salt & pepper to taste. Transfer to a jar or airtight bowl and store in the fridge (will keep for ~2 weeks). If you want a completely smooth sauce, let it cool a bit and run it through the blender.
